While October's International Cooking Show had to be canceled unexpectedly, our guest for this month was kind enough to record a brief video on how to make tarator, a traditional Bulgarian cold soup.
A special thanks to Petiya Stoichkova for sharing this delicious soup with us!
Tarator (traditional Bulgarian cold soup) recipe:
Ingredients:
- 4 cups of Bulgarian yogurt (or Greek yogurt)
- 8 cups of drinkable water (cold if possible)
- 4-6 cucumbers
- 3 strings of dill
- 3 tablespoons of vegetable oil
- 1-2 cloves of garlic (optional)
- salt
Cooking Utensils:
- big bowl
- peeler
- whisk (or a spoon)
- knife
- ladle
- cutting board
Procedure:
1. Peel the skin off the cucumbers and cut off the butts.
2. Dice the cucumbers and put them in the big bowl.
3. Cut the dill perpendicularly to its length into small strips and put them in the big bowl.
4. Whisk the yogurt within its container. Once it reaches a creamy and smooth texture, pour it into the big bowl.
5. (Optional) Crack, peel, and dice the garlic cloves.
6. Add the 8 cups of water and mix until it is consistent.
7. Add the 3 tablespoons of vegetable oil.
8. Add salt.
9. Mix
10. Enjoy!
